Recipe Review: Low-Fat Crockpot Beef Stroganoff

this recipe was SO easy and really delicious...although i don't know how low-fat it really is. i mean, it's beef stroganoff for pete's sake.

1-1/2 lbs lean beef stew meat, cut into 1" cubes
1 onion, chopped
1 clove garlic, minced
1 tsp salt
1/4 tsp freshly ground black pepper
1 lb mushrooms, sliced
1 c fat-free sour cream
1 can fat-free cream of mushroom soup
1 c. water

place all ingredients except sour cream in 4-quart or larger slow cooker. stire to combine. cover. cook on low 6-8 hours. stir in sour cream, cover. cook on high a few more minutes or until heated through. serve over hot cooked egg noodles and garnish with chopped parsley if desired.


like i said--super easy. and when i walked in the apartment after work yesterday, our place smelled delicious. i think it drove poor charlie crazy smelling tasty food all day and not being able to find it...

anyway, the stew meat we bought was already cubed...probably a little bigger than 1", but it cooked for almost 9 hours so it was very tender and came apart--didn't make much of a difference, so i'm glad i didn't spend the time on cutting it into smaller bits.

we have a jar of minced garlic that we use everytime a recipe calls for it...that way we're not repeatedly buying fresh garlic. we've had this jar for a while and it's still about half full.

i left the mushrooms out partially because i forgot, but i also hate them...dustin likes them, though, so i think next time i'll get a jar and make him his own half to have. i did make a can of corn and we mixed it in...i love corn as much as butter and salt. i add it to stuff all the time.

prepped this the night before, stuck it in the fridge, and turned it on in the morning. this will definitely be something we make again...especially since it was so easy to make! (and there are lots of leftover!)
